  • 200ml of pomace oil

Cauliflower puree:

  • 1/2 small head of cauliflower – leaf removed and cut into small pieces
  • 1 x can of coconut milk
  • Sea salt

Instructions

  1. For the roasted cauliflower: take 1 cauliflower and remove the root. Cut the large florets into steak-sized pieces. Season these with a mixture of salt, porcini powder and a little oil. Then, heat a frying pan and add oil. Place the cauliflower and roast it on both sides. Cook until cauliflower is tender, then remove and let cool.
  2. For the cauliflower puree: take the other cauliflower, remove the root and leaves and chop finely. Add salt and coconut milk and put them in a frying pan. Then cover and cook until the cauliflower is soft. Remove from the heat and put everything in a thermal blender: blend until smooth and then pass through a fine chinois.
  3. To serve: put 2 tablespoons of the cauliflower puree on the sides of the plate, add a little oil on top and 3-4 pieces of burnt cauliflower in the center of the plate.
